Ingredients for serving 1 portion
Fresh passion fruit puree – 20gm
Sugar – 50gm
Egg white – 25gm
Egg yolk – 25gm
Whipping cream – 100ml
Gelatin – 3gm
Strawberry puree – 20gm
Beat egg yolk and sugar till sugar is dissolved. Beat egg white separately and add the egg yolk mixture. Add gelatin and cream. Divide the mixture into two bowls and add the purees separately. Put the passion fruit mixture into a mould and keep it in 10 minutes in freezer.
Add strawberry puree mixture on the top of the passion fruit mixture and set in chiller. Once set properly, cut as you like and garnish.
