Singaporean Rice with Prawn and Chicken

Rice 2 ½ cups
Small prawns ½ packet
Boneless chicken 1 cup (cubes)
Mushrooms ½ tin
Oil 1 cup
Bean sprouts 1 cup
Spring onion 1 cup sliced
Yellow color a pinch
Onion 1 (chopped)
Carrots 2 sliced (chopped)
Capsicums 2 (chopped)
Eggs 3
Green chilies 4
Boiled noodles half pack
Ginger garlic paste 1 tsp
Sugar 1 tsp
Black pepper 1 tsp crushed
Ground cinnamon 1 tsp
Chicken powder 1 tbsp
Sesame oil 1 tbsp
Red chili flakes 1 tbsp
Soya sauce 3 tbsp
White vinegar 3 tbsp
Salt to taste
Cooking Directions

Add rice, white vinegar, salt and water to a cooking pot and boil till half cooked.

When water dries up, allow simmering for 5 minutes and spread on a tray.

In a wok, add oil and sliced onion to sauté till onion turns transparent.

Then add ginger garlic paste and chicken pieces, mix briefly.
When chicken is less watery, add small prawns and stir continuously.

Then add white vinegar, soya sauce, chicken powder, crushed black pepper and red chili flakes and mix.

Also add mushrooms, carrots, capsicums and boiled noodles.
Toss rice, soya sauce, vinegar and stir fry.
Add sesame oil.

Top with a cup of finely sliced spring onion and a cup of bean sprouts and serve hot.
